The difference is the bread. Bruschetta is a thick slice of rustic bread grilled or charred, rubbed with raw garlic, drizzled with olive oil, and then topped. The name comes from the Italian verb bruscare, meaning to char or to roast over coals, so the word is describing the toast itself. Crostini are smaller and thinner rounds cut from a narrower loaf and toasted or baked rather than grilled, usually carrying richer toppings like cured meat, cheese, or pate. The most useful thing to know: bruschetta is not the name of the chopped tomato mixture. It is the name of the bread underneath it.

What is bruschetta?

Bruschetta is one of the oldest and simplest things in Italian cooking: bread grilled over fire, rubbed with a cut clove of garlic while it is still hot, salted, and dressed with good olive oil. In its original form that was the entire dish, and in parts of central Italy it still is, particularly at olive harvest when the point is to taste the new oil.

Everything else is a topping. The version most Americans know, chopped tomato with basil and olive oil, is one option among many, and it is why so many people think the word refers to the tomato mixture. Beans, sauteed greens, mushrooms, and cheese are all traditional. What makes it bruschetta is that the bread is thick, charred, and garlic rubbed.

How to pronounce bruschetta

In Italian, the letter combination sch is pronounced sk, not sh. So bruschetta is said broo-SKET-tah, with a hard k sound in the middle. The h is there specifically to keep the c hard: without it, the Italian sc before an e would soften to a sh sound, which is how you get scherzo, bruschetta, and Chianti on one side and sciopero on the other.

This is a spelling rule, not a test of anyone's sophistication. Plenty of English speakers say broo-SHET-tah, everyone knows what they mean, and no server is going to blink. If you want the Italian pronunciation, the only change you need to make is one consonant.

Crostini is more forgiving: kro-STEE-nee. Crostino is the singular, though almost nobody orders just one.

Which should you order?

Order bruschetta if you want something fresh and light to start with, especially before a heavy pasta course. Marinated tomatoes and basil on charred bread is the most straightforward opener on the antipasti list, and it works well for a table that has not decided what it wants yet.

Order crostini if you want something richer. Prosciutto, arugula, and burrata is salt, pepperiness, and cream on a crisp base, and it eats more like a small course than a bread starter. It also pairs better with a glass of wine before dinner.
